Radish Mix (Daikon/Rambo)

Radish microgreens are the young seedlings of the radish plant (Raphanus sativus), harvested when 3-4 inches tall, just after the cotyledon leaves develop and before true leaves fully form. Unlike radish sprouts, which are grown in water and eaten with the seed, microgreens are grown in soil, and only the stems and leaves are consumed. They belong to the Brassica family, which includes broccoli and cabbage, and have a milder, yet peppery flavor compared to mature radishes.
 
Radish microgreens are exceptionally nutrient-dense. Per 100 grams, they provide approximately 14.8 mg of vitamin C, 233 mg of potassium, 25 µg of folate, and 1.6 g of dietary fiber. They also contain vitamins A, E, and K, calcium, iron, phosphorus, magnesium, and essential amino acids.
