Carrot
Carrot microgreens are the tender, young seedlings of the carrot plant, harvested when they are just 4–5 inches tall, offering a mild, sweet, and earthy flavor with a delicate, feathery texture. These tiny powerhouses can be used raw in salads, sandwiches, soups, and smoothies, or as a vibrant garnish for tacos, wraps, and stir-fries. Their lacy, fern-like leaves add both color and crunch, making them a standout in any dish.
Unlike mature carrot tops, they are nutrient-dense, rich in vitamins A, C, and K, beta-carotene, calcium, iron, and antioxidants. A single serving can contain up to 92% of the daily vitamin A requirement and significant amounts of vitamin K and lutein, supporting eye health, immune function, bone strength, and skin vitality.
